Cheesecake Pie
 
Filling
8 oz cream cheese

3 large eggs
  • Pre-heat oven to 350°F.
  • Make sure cream cheese has come to room temp
    before mixing, or filling will not get smooth.
    (Can microwave it a little bit if in a hurry.)
  • Put cream cheese in mixing bowl and mix until creamy.
  • Add eggs one at a time and beat until smooth.
  • Scrape bowl to make sure cheese has no lumps.
½ cup sugar
pinch salt
1 tsp vanilla
zest of 1 lemon

8"–9" pie crust
  • Mix sugar, salt, vanilla, and lemon zest into filling.
  • Pour filling into pie crust.
  • Bake until only center still jiggles slightly
    (about 25 minutes).
  • Leave oven on, but remove pie from oven
    and let cool for 5 minutes.


Topping
8 oz sour cream

3 TBL sugar

1 tsp vanilla
  • While pie is cooling for 5 minutes,
    mix sour cream, sugar, and vanilla.
  • After 5 minutes pour over pie and spread to cover.
  • Bake pie for 5 more minutes.
  • Remove from oven and let cool.
  • When cool enough, cover pie and refrigerate.
  • Serve cold.
